About This Coffee:
Sourced from the close-knit Chichupak Co-operative in the beautiful highlands of Coban, Guatemala, this washed coffee showcases the dedication and tradition of the local farmers. At altitudes of 1600-2000 meters, the Bourbon Arabica beans develop a vibrant flavor profile, offering tropical fruit notes balanced with hints of caramel, dark chocolate, and vanilla, with a subtle touch of orange. It’s an exquisite reflection of the rich soils and unique climate of the region.
The Chichupak Co-op is led by Faustín Chen and association president Mario Sic, both of whom have worked tirelessly to improve the quality of the coffee and the livelihoods of the community. Coffee is the lifeblood of this indigenous group, and their commitment to traditional farming methods is apparent in every cup. Each batch of cherries is handpicked and processed with care, ensuring that only the finest quality beans make it through to your brew.
The Region and Its History:
The word “Chichupak” comes from the indigenous terms for “place” and “soap plant,” as the locals historically grew Achi, a plant used for soap-making. Today, the community still preserves its rich indigenous heritage, honoring the traditions of their ancestors, including the legendary Rabinal Leb, King of the ancient Mayan kingdom. Many residents continue to wear traditional clothing, a vibrant representation of their cultural roots.
The Chichupak community is tucked away in the rugged landscapes of Baja Verapaz, perched high on one of the region’s tallest peaks. Though it’s just 100 kilometers from Coban, the journey is anything but simple, involving winding dirt roads through several villages. But once you arrive, you’re welcomed into a magical world, one where the past meets the present and where coffee is cherished.
The Coffee Process:
At Chichupak, the coffee production process remains wonderfully traditional. After the coffee cherries are harvested, they are processed at the cooperative’s mill. Here, each member has access to depulpers, fermentation tanks, wash channels, and drying beds, ensuring careful handling of the coffee at every stage. The co-op even operates its own honey water treatment plant, demonstrating their commitment to sustainable practices by ensuring waste water is fully decontaminated to protect their environment.
The result is a beautifully balanced coffee that captures the essence of Chichupak’s history, geography, and craftsmanship.
