This single-plot microlot is honey processed—cherries are carefully de-pulped and then sun-dried with all the mucilage left intact, capturing nature’s own sweet touch. For generations, the Peraltas have nurtured their coffee-growing tradition, dating back to the early 20th century. Then in 2008, brothers Julio and Octavio put their stamp on the legacy, shifting focus to innovative specialty coffee preparations that honour the past while looking to the future.
